Reader Request: Baked Oatmeal Recipe

If you love oatmeal this is a new twist.

2 cups uncooked quick oats
1/2 cup packed brown sugar
1/3 cup of raisins
1 teaspoon of baking powder
1 1/2 cups of milk
1 teaspoon of cinnamon
1/2 cup of canned pumpkin
2 tablespoons of melted butter
1 large egg beaten

Combine all wet ingredients well.  Then add dry ingredients.  Pour mixture in a cooking sprayed coated baking dish.  Bake at 375* for 20 minutes.

I have been making it the night before and letting it soak all night.  Then in the morning just throw it in first thing and it is ready before you know it.  If you do this you may have to add a few minutes of cooking time cause it started out cold. If you google baked oatmeal it will show you photos of what it looks like when done.

Can also substitute the pumpkin with applesauce, swap out raisins for other dried fruits,  add walnuts, chi seeds or what ever you like.

Note from HIM: this amount made enough for a second day of baked oatmeal awesomeness. Although it was a little dry from being in the fridge I scooped out my portion into a bowl, added a little bit of skim milk and then heated until I was satisfied. Just as good the second morning.
